You know when you’ve not got much left in the fridge and you’ve not enough time to go shopping but you still fancy something really good to eat, well today was one of those days. I had loads of carrots and an onion so I thought I can make soup. After a quick look on the web I got this simple recipe that was really easy to make, http://www.bbc.co.uk/food/recipes/carrotandcorianderso_1919You only need;
1 tbsp. vegetable oil
1 onion, sliced
450g/1lb carrots, sliced
1tsp ground coriander
1.2 litres/2 pints vegetable stock
large bunch fresh coriander, roughly chopped
salt and freshly ground black pepper
Method
- Heat oil in a large pan add onions and carrots cook for 3-4 minutes until they start to soften.
- Stir in the ground coriander and add the salt and pepper, cook for another minute.
- Add the vegetable stock and bring to the boil, simmer until the vegetables are tender.
- Whizz with a hand blender or blender until smooth. Reheat and stir in fresh coriander, ready to serve.
All done:) what a really quick & easy soup to make and I think most of us have a stock cube and spices in our dry store cupboard. This soup was so tasty I definitely would make it again, but I have to confess I did add a little single cream just to add a little creaminess, even though it was quite creamy, I couldn’t resist! A few chunks of crusty bread with best butter and it’s a dream to eat, I only spread the butter on and off as I’m trying to be good!
This recipe was cheap to make and really filling, great for a family Lunch on a cold and wet day like today. There is quite a lot left so after the soup has cooled down I’m going to transfer the rest of the soup into containers ready to freeze.
I know it’s easy to buy soup, but there is something really satisfying when you’ve made it yourself, don’t you think? plus you know exactly what is in it, Happy Cooking!
